The schedule time of the emails created with Easy Mail Merge depends on Outlook’s Automated send and receive time. If the time scheduled in Easy Mail Merge is less then the time set in the Outlook Automated Send and Receive, the emails which pass over that time won't be sent until next time you press Send/Receive button or when the Automatically Send/Receive time comes. For example if you set a 5 minute time in Outlook Automated Send and Receive and you create a mail merge of five emails with Easy Mail Merge and a scheduled time of 1 mail at 1 minute, when you press Send/Receive button it will send all the emails at once. But if you set the Easy Mail Merge time later than the Automatically Send/Receive time, for example 7 minutes, then every time when Outlook will automatically send and receive mails, it will send one mail each time. Same thing happens when Outlook Automated Send and Receive time is equal with the scheduled time set with Easy Mail Merge.

To check Automated Send and Receive time go to Outlook->Tools->Send/Receive->Send/Receive Settings->Define Send/Receive Groups (or you can press Alt+Ctrl+S) and check if Schedule an Automatic Send/Receive option is checked and if it is, set the time you want.
